Chicken Fajitas

Last night we had chicken fajitas for dinner.  I am pretty sure I am a lover of Mexican food, so it hit my spot (even if Uncle gets tired of eating Mexican sometimes)!  Here's what you need:

Fajita Seasoning:
1 1/2 tsp cumin
1/2 tsp dried oregano, crushed
1/4 tsp salt
1/4 tsp ground black pepper
1/8 tsp garlic powder
1/8 tsp onion powder
1/4 tsp ground red pepper

1 bell pepper sliced (I used half red and half green)
1 medium onion sliced
2 chicken breasts thinly sliced (you could use beef instead)
flour tortillas
toppings (sour cream, cheese, guacamole, tomatoes, salsa, etc.)

Mix all of the Fajita Seasoning spices together.  Put a tablespoon of oil in a large frying pan (medium to medium-high heat).  Add your onion, peppers, and chicken.  Sprinkle with the Fajita Seasoning.  Cook until meat is cooked and vegetables are tender-crisp.  Serve in warmed tortillas with your choice of toppings.
